Tait said he received about 2,000 resumes to be the chef, but once he saw a woman who had previously worked as Stevie Wonder's personal chef, he hired her “on the spot.” He then told the “amazing” woman that he wanted the food to revolve around the Zone Blue diet because “part of self-care is what we put into our bodies.”
The “Blue Zone Diet” is mostly plant-based, with an emphasis on unprocessed foods designed to improve overall health. Carrara follows this by incorporating plenty of fresh ingredients into his menu.
“It's Mediterranean food… (The chef) prepared poached salmon and Chilean sea bass with lotus roots and turnips and all these different delicious exotic vegetables,” he said of the food served at Carrara. “It's organic, it's made fresh every day, it's made with love every day, (by) someone who actually (cares).”
Tait also pointed out that the treatment center is not entirely luxurious.
“People come to therapy, and they're completely broken, and they feel ashamed. They feel like they've thrown away their whole life,” he said. “When people come to therapy, they need love, care, respect, support, empathy, compassion, and attunement to the needs of the individual before they know they have a need.” .
